Today we released the feature to switch PHP versions per site. 

You can install each desired PHP version we offer inside server level PHP tab, once installed you will get more versions available inside the site -> META tab where you can select the desired PHP version for that site.

It is also possible to select a default PHP version which newly created sites will use, you can change this once it has ben created.
